These pancakes are less than perfect looking, but taste phenomenal.
As you know from my previous post, we just moved into our new house. We don’t have much (just the essentials at the moment) and are working towards making the place feel more like a home as we slowly collect art, rugs, and other homely things. But, I’ve felt whenever we sit down together in this seemingly empty house, that there’s nothing quite like a home cooked that makes me feel, well, AT HOME.
Here is the pancake recipe below if you’re interested.
1 1/4 cups sifted all-purpose flour
3 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
1 beaten egg
1 cup milk ( we substitute 1/2 a cup of milk for greek yoghurt)
2 tablespoons salad oil
Sift dry ingredients together. Combine salad oil, milk (and yoghurt *optional*) and egg. Stir until just moistened. Ladle 1/4 cup puddles onto a hot griddle. Flip and stack them as high as you like!
We topped ours with a homemade black berry sauce and of course, peanut butter.
Black Berry Sauce
1 handful of black berries per person
2 tablespoons brown sugar
splash of water
Simmer berries, sugar and water on medium heat until berries break down. Too easy!
